So remember that post a while back about the mondo humungous zucchini?!? Turns out I did not learn my lesson about keeping an eye on the things growing my garden. I found another one. No jokes. Der. Well here is part 2 to that series where we make up some yummy Zucchini Noodles! This recipe is based on the Tupperware Summer Squash Pasta recipe. As here in Canada Zucchini is really the "go-to" garden squash I've just used the one type. The other amendment I've changed up is to create my own "Quick Marinara" rather than just sautéing whole Grape Tomatoes. This not only makes it more kid friendly, but I may also have a crazy crop of Grape Tomatoes that are giving the zucchini a run for it's money (just in quantity rather than size...I promise, I'm learning from this!!) |
So for this recipe we feature the Mandoline, one of my favourite products. When I first received mine in, I wasn't sure what exactly I'd do with it. Turns out, there are a lot of different cuts and dices. These Zucchini Noodles are just the tip of the iceberg! I also use it for dicing all that zucchini for pickles...super quick...just pull, twist, push, pull, twist, push. (Date Me and I'll come show you what all that means!!) |
